Kaiseki Horin is a fine dining restaurant with a spacious terrace overlooking the Forest Garden where red pines, quinces, wild cherries, camellias, maples and other trees grow freely. We choose the finest ingredients with great care from a wide range of food products from our region and we prepare fresh seasonal courses for our guests’ delight.
Philosophy
Following Japan’s omakase dining tradition, the dinner menus served at the Kaiseki Horin are a showcase of the best seasonal products. The dishes are prepared taking into account the dietary requirements and preferences of each guest, using the finest local ingredients.
The distinctive feature of Kaga City from the point of view of natural environment is that the two rivers (Daisyouji River and Iburibashi River) run from the source into the Sea only through Kaga city without touching any other cities. The rivers flow from the Mt. Dainichi which is 1368m above sea level. As the distance between the source and estuaries are short, Kaga city contains various ecosystems (forests, primeval forests, semi-primary forests, lakes, rivers, wetlands, paddy fields, etc.). Various ecosystems lead to biodiversity proved by the fact that 11 species of raptors (often used as biodiversity indicators) are found within Kaga City, which accounts to 70% of birds of prey species observed throughout the country. The various ecosystems and biodiversity lead also to a variety of fresh ingredients from the mountain, lakes and the Sea of Japan.
